There are two types of people in this world- those who appreciate the fabulous-ness of bleu cheese & those who just don’t. My husband just doesn’t get it & I could live off seriously… fragrant cheeses for quite awhile. So what is a girl to do? It isn’t like he forbids it but I also have to figure out a way to work in my love of blue into some lunch & snack options. & then in walks this idea of making it last even longer by doubling it with another cheese. Keep reading to scoop up this recipe & nosh to your heart’s desire!
First I want to talk a bit about the star of this recipe. Blue cheeses often get overlooked & only tossed on salads. But it is so much more! & not all cheeses are created equally either. If you’re a true bleu fan or a hesitant taste-tester there are some things to keep in mind. If you want a much more mild cheese, you need to look for cheese with fewer bits of mold pockets. Also those that have a creamier texture- not hard & likely not dry looking crumbles. Don’t fear the blue coloring if you are a bleu fan- that’s where the big flavor is! Flavors range from sweet to very salty to downright pungent. My blue cheese choice here is Castello Danish Blue Cheese which is a bit sharp but seriously creamy in texture.
You can also pair this dip/spread with about anything you want but I highly recommend some reduced orglaze balsalmic. I love the sharp yet sweet tenacity of fig, personally. If you love vinegar…well this just goes so incredibly well along with some chopped nuts or pear. You can also sub in honey if you really want to go sweet.
- 4 ounces quality bleu cheese
- 4 ounces cream cheese
- 2 tbsp extra virgin olive oil
- fresh cracked pepper to taste
- 2 tbsp whipping cream
- 1-4 tbsp milk
- Add blue cheese, cream cheese, olive oil, & cracked pepper to food processor. Mix until very creamy & smoothe.
- Add in whipping cream & mix well.
- Add milk until you reach desired consistency.
- Enjoy immediately or store in refrigerator.
